I Can’t Bake for Sh*t

I’ve taken this recipe by the talented chef and writer Richard Sax from the Food52 website and tweaked it by adding the option of adding in either THC or CBD depending on your taste. Personally, I’m a terrible baker. I’ve tried, and unless it’s something very simple, I find it unpredictable and difficult. This might seem like a paradox considering that baking is based in following instructions with precision, but it’s not. Cooking food on the stove is a bit more free, it allows for multi-tasking in a way that baking opposes. You have agency with the choices you make. With baking, you follow the instructions exactly to get a desired result, and once you put it in the oven, it’s out of your hands. With cooking, once you know how individual ingredients handle heat, along with flavor profiles, you can kind of just go, according to timing. You can watch the food as it develops, adding or reducing heat, spices, etc, working on a few parts of a meal at once until everything comes together. This requires practice and knowledge of ingredients, sure, but it’s always adjustable. Baking is meticulous, measured, and still not guaranteed to work out the way it’s intended. (I know from personal experience, believe me.)

This isn’t to say I’ve never baked a day in my life. I have. I’ve made brownies. I like them. I’ve also tried making vegan pumpkin pie, which ended up being a pile of mush, although a flavorful one. I will say that I’ve made some pretty good chocochip cookies in my day. I have never attempted to make a cake, nor would I normally. If I were to try, it would definitely be one that has a subtitle of “This Genius Flourless Chocolate Cloud Cake Will Look (& Taste) Amazing No Matter What”. I’m assuming that this also means whether you add CBD, THC, or use cannabutter to make it. AND… it can look however, BECAUSE whipped cream and chocolate shavings on top. Like, it’s supposed to look deconstructed, with a cloud on top. Let it be.

Fail Proof Chocolate Cake

While I don’t have the patience to write out the actual steps to the recipe, I will leave you with the ingredients, so you at least know what you’re getting into. If you’re a seasoned baker, you’ll breeze through it. If not, best wishes, lol. (It’s likely to taste good regardless.)

Ingredients:

– 8 oz (225g) best-quality bittersweet chocolate, coarsely chopped.

– 1/2 cup (110g) unsalted butter, at room temperature and cut into 1-tablespoon pieces.

– 6 large eggs

– 1 cup (200 grams) sugar

– 2 tablespoons cognac or Grand Marnier (optional)

– Finely grated zest of one orange ( about one tablespoon)

– CBD or THC (to taste, optional)

Whipped cream [from scratch please ;)]

– 1.5 cups of heavy cream, very cold

– 3 tablespoons of confectionery sugar

– 1 teaspoon pure vanilla extract

– Either unsweetened cocoa powder or bittersweet chocolate shavings
